At the risk of beating a dead horse, I really recommend the works of Stelvio Cipriani, Piero Piccioni, Armando Trovajoli and Ennio Morricone.
Stelvio's best work is often considered to be the Femina Ridens soundtrack, particularly Mary's Theme and Femina Ridens (cantata). While those are fantastic, my favorite soundtrack he had a hand in was for Uccidere in Silenzio.
Piero Piccioni may be the most prolific of the 60s Italian film composers. His best work is probably the Scacco alla Regina soundtrack, particularly the title track and Capriccio. Picking a second favorite is hard, but I really like his work on La Parmigiana which unfortunately has yet to be released in its entirety.
I haven't come across too many films scored by Armando Trovajoli yet but he will always be one of the greats for the La Matriarca soundtrack alone. All of the tracks in that film are based around a romantic ballad known as "L'Amore Dice Ciao" translated as "Love Says Hello." I listen to at least one of its variations every single day.
Ennio Morricone is probably best known to US audiences for his spaghetti western scores like for The Good, the Bad and the Ugly. But he did all kinds of stuff. My two favorite individual tracks he did come from the La Voglia Matta soundtrack: the title theme and "Sole e Sogni" (which translates to "Sun and Dreams.")
